There’s one thing about limes in Australia that few people know and others are very secretive about, the Dooja or Australian Round Lime! Very underrated, the Dooja varies in size and shape but is roughly round and about 2.5cm in diameter.
The best way to use is to make a cut around the ‘equator’ of the fruit, just a few mm deep, not all the way through. Then pull apart with a little twist and the fruit will separate into two halves. Then use a teaspoon to gently pry the vesicles away from the rind. It’s a little like scooping out some ice cream. Put the vesicles on a flat surface and gently press down. This will separate them into the individual vesicles. Use like fingerlimes. Except (wow), they taste much better than fingerlimes! they have much less ‘herbal’ or ‘resinous’ taste and it is cleaner and more crisp on the palate.
